Breakfast Burritos
Spice mix
- 4 tsp ground cumin
- 2 tsp salt
- 1 tsp chili powder (see note 1)
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
Mix spices and set aside.
Ingredients:
- 2-lbs breakfast sausage
- 1 medium onion, diced
- 1 can fire-roasted diced tomatoes
- 1 can black beans, drained
- 12 eggs, scrambled
- Tortillas
- Shredded Cheese
- Salsa (optional)
- Sour Cream (optional)

Brown the sausage and drain. Over medium heat, add onion and dry spices and start cooking until onions turn opaque. Add in the beans and tomatoes and cook for 5 more minutes. Add in eggs and stir until cooked through. Remove from heat.
Serve ½ cup of the mixture in an 8-10” tortilla, then top with shredded cheese. Roll up and enjoy your burrito. If you prefer any additional toppings, add them before rolling your burrito.

Personal Preference: I like the spicy side of life and choose spicy sausage for my breakfast burritos. Most people I eat with cannot handle too much spice but are usually okay with 1-lb spicy and 1-lb mild sausage.
